We have to face one hard fact when shopping for home freeze dryers. That fact is, unlike many other purchases, freeze dryers aren't cheap. However, unlike many other purchases, a freeze dryer can provide a lifetime of cost savings that ultimately pay for itself.

Obviously things like ice cream and marshmallows you would want to let the freeze cycle run longer. When I'm ready to start the drying cycle, I open the door, remove the insulator, and check the temperature of the food on the trays with an infrared thermometer. As long as it's below -10F I start the dry cycle. A side note for TonyC, have you ever thought about attaching a mirror to each side of the tray rack to reflect the radiant heat back in to the trays? I've looked at some mirror finish stainless on ebay, and it looks like you could do it for about $40. Not sure if it's worth a try or not. I would think it would let you get more water out in a cycle because the radiant heat wouldn't be warming the ice on the chamber walls. Just a thought.... Odds are the problem is the vacuum hose or its end connections, the drain valve, or the door gasket. Based upon my experience I'd double check the fittings while installed on the FDer.
I think a community-built troubleshooting manual is a great idea. These machines are simple in some ways, and more complex in others, and having a lot of eyes on the problem is always good.
The system records and maintains a log of the pressure and temperature during all parts of the freeze-dry cycle.

I've had a lot of cycles that the Completa time between pulling one batch out and starting the drying cycle on the next is around 2 hours. I'm running mine in a cold garage, so it cools down pretty quickly. If you have yours in a warm room it would probably take a little longer.
Without an pump isolation valve I would expect some air to flow back into the chamber through the pump resulting in the steady rise you witnessed. I saw the same phenomenon before I installed an isolation valve on my pump.
Freeze dried salsa One of our favorite things to freeze dried is our homemade salsa. It tastes much more like fresh than it does when canned. It reconstitutes very quickly and is delicious to eat as a dip or added to spaghetti sauce. We also like to sprinkle it on popcorn.
Cooked eggs can be freeze dried, but they tend to be rubbery when reconstituted. If you want to freeze dry cooked eggs, I recommend slightly undercooking them and then rehydrating them with boiling water. It will finish cooking them without making them rubbery.
